Picture this, its a sunny afternoon with a light breeze. You are sitting on your back porch or on your patio and you are craving a little drinky drink. Insert this cocktail.

I first had a Tamarindo Margarita in Cabo when Scotty and I went for the first time back in 2019 and I think about this drink more often then I care to admit. Its sweet and tangy and hits the spot on a warm summer day. The key to this margarita is the tamarind syrup that they use. I scoured stores upon returning home trying to find this syrup or something similar and came up empty. That’s when I decided to get creative. Using pulparindo (a mexican candy), I created a syrup.

Tips:

  • Adjust the amount of Tamarindo Syrup according to your taste preferences. Start with a smaller amount and add more if you prefer a stronger tamarind flavor.
  • Experiment with different tequilas to find your favorite flavor profile for this cocktail.

Tamarindo Margaritas and Tamarindo Syrup

Ingredients
  

Tamarindo Syrup

  • 5-6 pulparindo candies
  • 1/2 cup water
  • 2 tbsp sugar

Tamarindo Margarita

  • 2 oz tequila of choice
  • 1 oz Cointreau or Triple Sec
  • 1/2 oz lime juice
  • 1/2 – 1 oz Tamarindo Syrup
  • Ice
  • Tajin Seasoning (for rimming the glass)
  • Lime wedge (for garnish)

Instructions
 

Tamarindo Syrup

  • In a small pot, combine the Pulparindo candies, water, and sugar.
  • Place the pot over low heat and bring the mixture to a simmer, stirring occasionally.
  • Heat the mixture until the sugar is fully dissolved and the candies have melted down. Note that there may be small chunks of candy that do not fully dissolve.
  • Allow the syrup to cool for a few minutes, then strain it through a fine-mesh sieve to remove any remaining candy chunks.
  • Transfer the strained syrup into a clean jar or bottle for storage.

Tamarindo Margarita

  • Rim a glass with Tajin seasoning by running a lime wedge around the rim and dipping it into the seasoning.
  • Fill the glass with ice cubes and set it aside.
  • In a cocktail shaker, combine the tequila, Cointreau or Triple Sec, lime juice, and Tamarindo Syrup.
  • Fill the shaker with ice and shake vigorously until the mixture is well-chilled.
  • Strain the margarita into the prepared glass over ice.
  • Garnish with a lime wedge on the rim of the glass.
  • Serve immediately and enjoy the refreshing taste of this Tamarindo Margarita!
