Ingredients

  • 1 lb Ground Meat (ground turkey, beef, or chicken)
  • 2 tsp chili powder
  • 2 tsp paprika powder
  • 2 tsp cayenne powder
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 2 tsp cumin powder
  • 2 tsp oregano
  • salt and pepper, to taste
  • 1/4 cup water

Chipotle Crema

  • 1/2 cup greek yogurt, plain
  • 2 tbsp chipotles in adobo sauce
  • 2 cloves garlic
  • salt and pepper, to taste
  • juice of 1 lime

Instructions

  • Cook the Meat: In a large skillet, brown the ground meat over medium heat until it's about 80% cooked. Drain any excess fat from the skillet, then add 1/4 cup of water to the meat. Stir in the chili powder, paprika, cayenne pepper, garlic, onion, cumin, oregano, salt, and pepper. Let the meat simmer for 10-15 minutes, allowing the flavors to meld together.
  • Prepare the Chipotle Crema: In a blender, combine the Greek yogurt, chipotles in adobo sauce (or chopped chipotles), garlic cloves, salt, pepper, and lime juice. Blend until smooth and creamy. Adjust the seasoning to taste, adding more chipotles for extra heat if desired.
  • Assemble the Taco Bowls: To assemble your Fiesta Taco Bowls, start by layering my tasty Fiesta Potatoes (linked above), cooked rice or quinoa at the bottom of each bowl. Top with a generous portion of the seasoned meat mixture. Then, add diced onions, sliced jalapeños, and sliced avocado on top. Drizzle the chipotle crema over the toppings, and garnish with fresh cilantro or lime wedges if desired.
