Classic Chicken Salad
Ingredients
- 1/2 apple, chopped
- 1/2 small red onion, chopped
- 1/4 cup walnuts, chopped
- 1 1/2 cup rotisserie chicken, chopped
- 1/2 cup mayo
- 1/2 cup plain greek yogurt
- salt and pepper, to taste
Instructions
- Begin by chopping the apple and red onion into small pieces and place them into a large mixing bowl.
- Roughly chop the walnuts and add them to the mixing bowl as well.
- Chop the rotisserie chicken into small, bite sized pieces. Add the chopped chicken to the bowl with the apple, onion and walnuts.
- To the mixing bowl, add the mayo, greek yogurt, and salt + pepper and mixed until ingredients are evenly coated.
- Serve immediately or refrigerate to allow flavors to meld together.
