Bruschetta

Prep Time 20 minutes
Cook Time 5 minutes
Total Time 25 minutes
Course Appetizer
Servings 4

Ingredients

  • 4-5 tomatoes (roma, campari)
  • 1 tbsp olive oil
  • 1-2 cloves garlic, grated
  • 4-5 basil leaves, chopped
  • baguette slices, toasted
  • goat cheese
  • 2-3 tbsp balsamic glaze
  • salt and pepper, to taste

Instructions

  • Begin by preparing the tomato basil mixture. Dice up the fresh tomatoes and add them to a bowl. Freshly chop some basil and combine it with the tomatoes. Microplane or finely chop the garlic and add it to the bowl as well. Drizzle in about a tablespoon of quality olive oil, then season with fresh cracked pepper and flaky salt to taste. Set this mixture aside to marinate, allowing the flavors to meld together.
  • Toast slices of your favorite bread, such as sourdough, until they are golden and crispy.
  • To assemble the bruschetta, generously spread goat cheese over each slice of toasted bread. Top the goat cheese with a generous portion of the tomato and basil mixture. Drizzle with balsamic glaze.
  • Arrange the bruschetta on a serving platter and enjoy immediately
